Mushroom and Herb Quinoa
Savory, earthy, grounding — a gentle, umami-rich evening dish.
🌱 Ingredients
1 cup quinoa (rinsed)
2 cups vegetable broth
1 tbsp olive oil
1 cup sliced mushrooms
2 garlic cloves, minced
½ tsp thyme
Salt + pepper
Optional: spinach or kale folded in
🍲 Preparation
Cook quinoa in vegetable broth according to package directions.
Meanwhile, sauté mushrooms in olive oil until browned.
Add garlic + thyme — cook 1 more minute.
Stir mushrooms into cooked quinoa.
Add greens if desired.
Season with salt + pepper.
