Creekside Chickpea Salad
Bright, fresh, lemony, and incredibly simple — ideal for light lunches.
🌱 Ingredients
1 can chickpeas, rinsed and drained
½ cucumber, diced
1–2 tbsp fresh dill or parsley
Juice of ½ lemon
1 tbsp olive oil
Pinch of salt + black pepper
Optional: cherry tomatoes or green onion
🥗 Preparation
Add chickpeas, cucumber, herbs, and optional veggies to a bowl.
Drizzle with lemon juice + olive oil.
Season with salt + pepper.
Toss gently to combine.
Let sit 5–10 minutes for flavors to meld.
