Creekside Chickpea Salad

Bright, fresh, lemony, and incredibly simple — ideal for light lunches.

🌱 Ingredients

  • 1 can chickpeas, rinsed and drained

  • ½ cucumber, diced

  • 1–2 tbsp fresh dill or parsley

  • Juice of ½ lemon

  • 1 tbsp olive oil

  • Pinch of salt + black pepper

  • Optional: cherry tomatoes or green onion

🥗 Preparation

  1. Add chickpeas, cucumber, herbs, and optional veggies to a bowl.

  2. Drizzle with lemon juice + olive oil.

  3. Season with salt + pepper.

  4. Toss gently to combine.

  5. Let sit 5–10 minutes for flavors to meld.
