🌱 Ingredients
2 cups mixed greens (spinach, arugula, spring mix)
½ cucumber, sliced
1 handful cherry tomatoes, halved
¼ cup fresh berries (blueberries, raspberries, or sliced strawberries)
Optional: vegan feta or goat cheese substitute
Dressing:
1 tbsp olive oil
1 tsp lemon juice
½ tsp maple syrup or honey (if vegan substitute)
