Creamy Coconut Lentil Soup
A golden, velvety stew infused with ginger, turmeric, and quiet strength.
🌱 Ingredients
1 cup red lentils
1 can coconut milk
3 cups vegetable broth
1 tbsp olive oil
1 onion, diced
2–3 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tsp turmeric
½ tsp cumin
1–2 handfuls spinach
Salt + pepper to taste
Squeeze of lime (optional)
🍲 Preparation
Sauté onion in olive oil until translucent.
Add garlic, ginger, turmeric, and cumin — stir until fragrant.
Pour in coconut milk + broth.
Add lentils and bring to a gentle boil.
Reduce heat and simmer 20–25 minutes until thick and creamy.
Stir in spinach and cook 1–2 more minutes.
Season with salt + pepper.
Add lime if desired.
