Creamy Coconut Lentil Soup

A golden, velvety stew infused with ginger, turmeric, and quiet strength.

🌱 Ingredients

  • 1 cup red lentils

  • 1 can coconut milk

  • 3 cups vegetable broth

  • 1 tbsp olive oil

  • 1 onion, diced

  • 2–3 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 1 tsp turmeric

  • ½ tsp cumin

  • 1–2 handfuls spinach

  • Salt + pepper to taste

  • Squeeze of lime (optional)

🍲 Preparation

  1. Sauté onion in olive oil until translucent.

  2. Add garlic, ginger, turmeric, and cumin — stir until fragrant.

  3. Pour in coconut milk + broth.

  4. Add lentils and bring to a gentle boil.

  5. Reduce heat and simmer 20–25 minutes until thick and creamy.

  6. Stir in spinach and cook 1–2 more minutes.

  7. Season with salt + pepper.

  8. Add lime if desired.
